The stainless steel knock box, and why the material decides everything
A stainless steel knock box outlasts a plastic one for one reason: coffee oil. Plastic scratches, scratched plastic holds oil, and held oil goes rancid. Steel keeps the oil on the surface where hot water removes it. Steel is also heavier — and weight is what lets you knock firmly instead of holding the box still with your other hand.
Almost every knock box on a shelf is sold on capacity and price. Material gets one word on the label, usually near the bottom, and it is the only specification that predicts whether you will still be using the thing next year.
What coffee actually does to a knock box
Roasted beans carry oils. Extraction pulls some of them into the cup, and the rest stay in the puck — which is why a spent puck feels slightly slick rather than merely wet. Every time you knock, some of that oil transfers to whatever the grounds touch.
On a smooth, non-porous surface it stays where it lands and comes off with hot water. On a scratched surface it works into the scratches, where a cloth cannot reach it. Oil that sits in a scratch oxidises, and oxidised coffee oil smells rancid rather than like coffee. This is the real reason old knock boxes get thrown away: not because they broke, but because they started to smell and nothing fixed it.
Plastic does not start scratched. It gets there. The portafilter rim is machined metal and it meets the box hundreds of times a year, at the mouth and along the collar. Add a spoon used to scrape out a stuck puck, and a dishwasher cycle or two, and the surface stops being smooth long before the box stops being functional.
Steel, plastic, and the third option nobody warns you about
Capacity being equal, the body material changes three things: how the box ages, how much it weighs, and how it behaves near heat.

Wood is the option people fall for on looks, and it is the one that punishes a daily habit hardest. Grain absorbs oil the way it absorbs everything else, and the absorbed oil is inside the material rather than on it. A wooden box in a café is replaced routinely. A wooden box in a kitchen is usually kept far past the point where it should have been.
Weight is not a bonus — it is how the tool works
A spent puck is compressed at nine bars and it grips the basket. Releasing it takes one firm knock, and one firm knock takes a base that stays where you put it.
Put a light box on a counter and knock properly, and it slides or tips. So you knock more gently. A gentle knock leaves a ring of grounds welded to the basket wall, and now you are reaching for a spoon — scratching a basket that costs more than the box. Steel where it lasts, rubber where it gives
One honest clarification, because "stainless steel knock box" invites the wrong picture: the body and the collar are steel. The bar you actually strike is rubber over a rigid core, and that is deliberate.
The rim of a portafilter basket is machined to sit flush against the group head gasket, and that fit is what holds pressure while the shot pulls. A metal bar would peen that rim a little more every morning. Deform it slowly and the seal starts leaking at the edges, which shows up as a shot spraying sideways — a fault most people spend weeks blaming on their grind before they think of the thing they knock against.
So a good knock box is not "all metal". It is steel in the places that have to survive coffee oil, heat and years, and rubber in the single place that touches your machine. Anything else is a material choice made for the label rather than for the job.
The bar has to come out
This is the detail that separates a box you keep from a box you replace, and it is invisible in a product photo.
Grounds work their way underneath a fixed bar. They sit there damp, out of reach, and no amount of rinsing gets them. Within a few months the box smells and the only cure is to throw it away — which is how a well-made steel body ends up in a bin because of a two-dollar assembly decision. What 700 ml (24 fl oz) means in practice
A double shot leaves roughly 18 grams (0.6 oz) of damp, compressed grounds. Seven hundred millilitres holds a morning of them for a household pulling several shots — one buyer put it at around ten cups before emptying.
Emptying daily is still the right habit, and not because the box runs out of room. Spent grounds come out warm and wet, and wet grounds left several days in any sealed container ferment. That is true of every knock box ever made, in any material. The one you empty each morning never gets the chance.
